- Directions
- Combine sugar, fennel, paprika, garlic, pepper, and salt in a small bowl. Drizzle pork with oil and rub with spice mixture. Set aside.
- Prepare grill. Grill pork about 3-4 minutes on each side, or until cooked through.
Combine 1 cup quartered cherry tomatoes, 2 tablespoons diced red onion, and 1 tablespoon capers in a medium bowl. Toss with 2 teaspoons olive oil, 1 teaspoon fresh lemon juice, and season with ¼ teaspoon salt and freshly ground pepper to taste.
